   Chicken with Homemade Dressing


chicken-and-dressing A whole chicken recipe with my mom's famous dressing. The recipe for this dressing has been handed down for generations. It's what we grew up on and everyone of my generation thinks it's the best ever. It's made in the oven and you'll never want "Stove Top" dressing again. With the drippings from the chicken you can make some great gravy!

Ingredients

  • 1 whole chicken
  • chicken rub
  • 15 slices white bread
  • 1+ cup water
  • 1 stalk celery (diced)
  • 1 small onion (diced)
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp. pepper
  • 1/2 tsb. rubbed sage
  • 1 tbs. celery seed

Instructions (Chicken)

  1. Clean chicken and remove gizzard pack
  2. Rub chicken with chicken rub or your prefered spices
  3. Place 2 peices of aluminum foil (long enough to go around chicken) in a cross pattern on a cooking sheet. Place chicken in the middle and bring one side up and seal then do the same with the second peice.

Instructions (Dressing)

  1. Tear up bread and place in large bowl. Add 1 cup of water and mix until all the bread is real wet. You might need to add water until all the bread is wet and moiste. It will be kind of pastey
  2. Add the remaining ingredients, mix well, place in a medium caserole dish and cover with foil
  3. Place chicken and dressing in a preheated 350 dgree oven for a total of 1 1/2 hours. After 1 hour, uncover chicken and let cook another 1/2 hour and let brown.
  4. Gravy When you uncover chicken drain the grease and put in small sauce pan. Place on low heat. Mix some corn starch and water together and slowly add until you get the desired texture. Gravy will thicken more as it cooks. Salt and pepper to taste
Preparation time: 35 minutes

Cooking time: 1 1/2 hours
